The duration for fermentation to be considered "done" depends on several factors and generally can range from 2 to 21 days. Starting from a starter culture, such as kefir grains, brine, or temperatures speed up the fermentation process. Please note: if you are using a specific culture, follow the recommended instructions that come with the culture to determine the appropriate duration to allow vegetable fermentation. Using large amounts of salt will slow down the fermentation process. Cold room temperatures will slow down the process. A warm room temperature will speed up the process. In general, when we try a pronounced flavor, it is ready to eat. This can vary depending on personal preferences and tastes. Pickles are a great example; some people prefer the taste of pickles after just one week, while others prefer a more pronounced flavor and strong smell, which can take 2 to 3 weeks.

Mixed pickled salad
Green tomatoes, peppers, cabbage, cucumbers, carrots
They are cleaned, stirred, ground, mixed, and left for 24 hours until they release their own liquid.
For 1,300g of salad, you need:
18 g salt (1 tablespoon), 14 ml oil, 14 ml vinegar (1 tablespoon), 7 g sugar, 10 g whole black pepper.
After 24 hours, the sterilized jars are filled and pasteurized at 70°C/30 minutes.
