Egypt squash is an annual herbaceous plant from the melon family. and originates from Central America, along with potatoes and tomatoes, it is one of the products exported after the discovery of America. In our country, common pumpkin, meat squash, and Egypt squash are used. With pumpkin, you can fill a menu, from antipasti to dessert, and on any dish it is not only tasty but also healthy. Some of the qualities of pumpkins, as its pulp contains many key substances, especially caratonoids and pectic substances; pumpkin pulp and juice are good diuretics. Specialists often recommend drinking a glass in the morning on an empty stomach. From the pulp, you can extract a layer that coats with milk; it is suitable for gastric discomfort and prostate pathologies. Many kitchen dishes can be prepared from pumpkin, and below we provide the recipe for making corn pumpkin jam.
Ingredients:
2 kg pumpkin pieces
2 kg sugar
2 liters of lime water
200g walnuts
The corn pumpkin—vim-hot, as it is called in some parts of our country—is peeled and cut into pieces, which we then leave for 2 hours in lime water (100g of lime dissolved in 2 liters of water). We remove the pumpkin pieces from the lime, rinse them 3-4 times with hot water, drain well, then place them in the hot syrup, which we have previously boiled (2kg of sugar with 400ml of water). We simmer the jam over low heat for 1 hour, then add the walnuts, boil for another 15 minutes, and then remove from the heat.
We fill the sterilized jars with hot jam and seal them hermetically.
