Ingredients for about 200g of ricotta
- 1l full-fat milk
- 2 tablespoons apple cider vinegar or lemon juice
We place the milk in a saucepan over low heat and heat it until it reaches 80°C, checking it with a cooking thermometer, or if you don't have one, you can see the moment when a thin film forms on the surface of the milk.
Stir occasionally so that the temperature is evenly distributed everywhere. Remove it from the heat and add 2 tablespoons of vinegar or lemon juice, stirring quickly for 1 minute. At this point, you will see the milk curdled, so some white particles will appear on the surface which will separate from the lower liquid. Cover the pot with a clean cloth and let it cool at room temperature.
When the ricotta has cooled, we collect it and place it on a clean cloth, letting the liquid drain for about half an hour. If you want the ricotta dry, let it drain overnight.
We use it immediately for our cooking, or store it in the refrigerator for about 2 days.
